Ingredients:

bullet

1 rattlesnake, sliced into 4 in. sections

bullet

1 cup buttermilk

bullet

1 cup cornmeal

bullet

½ cup flour

bullet

Salt and pepper to taste

bullet

Dash of lemon pepper

bullet

Smidgen of Tabasco sauce (optional)

Method:

Clean the rattlesnake by removing the head, guts, skin, and rattles. Cut into 4 inch sections. Make batter with buttermilk, cornmeal, flower, salt, pepper, lemon pepper, and Tabasco. Dip 4 inch rattlesnake sections into batter and deep fry until golden brown. Best when served with homemade creamed taters and while beans with onions, and cornbread.
